Ingredients

- 3 oz Vegetable Oil
- 3 small diced White Onion
- 2 small diced Bell Pepper
- 2 T minced Garlic
- 2 oz Tomato Paste
- 1 oz Mississippi Red Pepper Sauce
- 1 T Taco Seasoning
- 1 qt Jasmine Rice
- 1½ qt Chicken Broth (low sodium)
- 1½ T Salt

Instructions

In heavy bottom sauce pot heat oil, onion, and bell pepper, sweat ingredients. Once translucent add garlic, tomato paste, Mississippi Red Pepper Sauce, and taco seasoning, bring to a simmer. Once simmering add rice and stir for 5 minutes until rice is hot and coated with all ingredients. Deglaze with chicken broth. Bring to a boil and stir, cover and turn heat to lowest setting for 15 minutes. After 15 minutes cut OFF heat and let sit for 10 minutes covered, fluff and serve.
